Ingredients:

  • 1 lb fresh squid, cleaned and sliced into rings
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 2 tablespoons pure maple syrup
  • 1 small red onion, finely diced
  • 1 jalapeño, seeded and finely chopped
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Avocado slices for garnish

Instructions:

  1. In a mixing bowl, combine the lime juice, lemon juice, and maple syrup. Whisk until well combined.
  2. Add the squid rings to the bowl and mix well to coat. Let it marinate for about 15-20 minutes, allowing the citrus to 'cook' the squid.
  3. After marinating, add the diced red onion, chopped jalapeño, quartered cherry tomatoes, and cilantro to the bowl. Stir gently to combine all ingredients.
  4. Season with salt and pepper to taste.
  5. Serve chilled, garnished with avocado slices.
