Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 lemon, zested and sliced
  • Fresh parsley, for garnish

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
  2. In a pot, bring chicken broth to a boil. Add the basmati rice, lemon zest, and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until rice is fluffy and liquid is absorbed.
  3. While the rice is cooking, heat a grill or grill pan over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side, or until fully cooked and juices run clear.
