Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 medium potatoes, diced
  • 1 tablespoon paprika
  • 1 tablespoon fresh parsley, chopped
  • 4 large lettuce leaves
  • 4 whole wheat wraps

Instructions:

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add the chicken breasts to the marinade and let it sit for at least 30 minutes, preferably 2 hours in the refrigerator.
  3. Preheat the oven to 400°F (200°C). Toss the diced potatoes with olive oil, paprika, salt, and pepper, then spread them out on a baking sheet.
  4. Roast the potatoes in the oven for 25-30 minutes or until golden and crispy, turning halfway through.
  5. While the potatoes are roasting, grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked.
  6. Once cooked, slice the chicken into strips.
  7. To assemble the wraps, lay a lettuce leaf on each tortilla, add a portion of roasted potatoes, and top with sliced chicken.
  8. Roll the wraps tightly and serve with a sprinkle of fresh parsley on top.
