Ingredients:

  • 8 oz whole wheat pasta
  • 1 lb chicken breast, grilled and sliced
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)
  • Fresh basil for garnish (optional)

Instructions:

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the zucchini, bell pepper, and garlic, and sauté until the vegetables are tender, about 5-7 minutes.
  3. Add the cherry tomatoes and spinach to the skillet and cook until the spinach wilts, about 2-3 minutes.
  4. In a small bowl, whisk together the lemon juice, remaining olive oil, dried oregano, salt, and pepper.
  5. Combine the cooked pasta with the sautéed vegetables and grilled chicken in the skillet. Pour the lemon dressing over the top and toss to combine.
