Ingredients:

  • 200g pasta (your choice)
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 medium carrots, julienned
  • 1 bell pepper, diced (any color)
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they become translucent and start to caramelize, about 5-7 minutes.
  3. Add the minced garlic, diced bell pepper, and julienned carrots to the skillet. Sauté for an additional 5 minutes, until the vegetables are tender.
  4. Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes, allowing the flavors to meld.
  5. Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper to taste.
