Ingredients:

  • 2 medium daikon radishes, peeled and cut into wedges
  • 2 tablespoons white miso paste
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon soy sauce (gluten-free if needed)
  • 1 tablespoon sesame seeds, toasted
  • 2 green onions, finely sliced for garnish
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the miso paste, maple syrup, rice vinegar, sesame oil, and soy sauce until smooth.
  3. Place the daikon wedges on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  4. Roast the daikon in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
  5. Remove from the oven and brush the miso glaze over the roasted daikon in the last 5 minutes of cooking.
  6. Once done, transfer to a serving platter, sprinkle with toasted sesame seeds and sliced green onions, and serve warm.
