Ingredients:

  • 1 can (400ml) full-fat coconut milk
  • 1/2 cup maple syrup
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup aquafaba (chickpea brine)
  • 1 tablespoon lemon juice
  • 1/4 cup coconut sugar (for caramel)
  • 1 tablespoon water (for caramel)

Instructions:

  1. In a saucepan, combine coconut milk, maple syrup, cornstarch, vanilla extract, and sea salt. Whisk together over medium heat until the mixture thickens and comes to a gentle boil. Remove from heat and let cool slightly.
  2. In a separate bowl, beat aquafaba with lemon juice until soft peaks form. Gently fold the whipped aquafaba into the cooled coconut mixture until fully combined.
  3. To make the caramel, combine coconut sugar and water in a small saucepan over medium-low heat. Stir until the sugar dissolves and turns a golden color. Quickly pour the caramel into the bottom of serving cups or a mold, swirling to coat the bottom.
  4. Pour the mousse-flan mixture on top of the caramel in the cups or mold. Refrigerate for at least 4 hours or until set.
  5. To serve, gently run a knife around the edges and invert onto a plate for a stunning presentation, revealing the caramel layer on top.
