Ingredients:

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 ripe papaya, peeled, seeded, and diced
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon maple syrup (optional)
  • Fresh mint leaves for garnish
  • Pinch of salt

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, and a pinch of salt. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
  4. Remove the saucepan from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
