Pipikaula Poke

This Pipikaula Poke recipe combines the traditional Hawaiian flavors of marinated beef with a creative twist of fresh vegetables and a sesame dressing. The salty umami of shoyu, the tang of vinegar, and the sweetness of sugar create a balanced marinade that elevates the tender beef. Served chilled, it's a refreshing dish perfect for any occasion, while still respecting traditional culinary principles.

Ingredients:

  • 1 lb beef flank steak
  • 1/4 cup shoyu (soy sauce)
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1/2 tsp black pepper
  • 1/4 cup green onions, chopped
  • 1/4 cup chopped cilantro
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1 tbsp sesame seeds

Instructions:

  1. Begin by marinating the beef flank steak. In a bowl, combine shoyu, rice vinegar, sugar, sesame oil, and black pepper. Mix well until the sugar is dissolved.
  2. Place the beef in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 2 hours, or overnight for best results.
  3. After marinating, preheat a grill or stovetop grill pan over medium-high heat. Remove the beef from the marinade and grill for about 4-5 minutes on each side, or until it reaches your desired level of doneness.
  4. Once cooked, let the beef rest for 5 minutes before slicing it thinly against the grain.
  5. In a large bowl, combine the sliced beef, green onions, cilantro, cucumber, and tomatoes. Toss gently to mix.
  6. Sprinkle sesame seeds on top and serve chilled or at room temperature.
