Ingredients:

  • 2 ripe pitayas (dragon fruit), peeled and chopped
  • 1 can (13.5 oz) coconut cream
  • 1/4 cup maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice
  • 1/2 cup dairy-free dark chocolate chips (optional, for coating)
  • 1 tablespoon coconut oil (optional, for coating)

Instructions:

  1. In a blender, combine the chopped pitayas, coconut cream, maple syrup, vanilla extract, and lime juice. Blend until smooth and creamy.
  2. Pour the mixture into ice pop molds, leaving a little space at the top for expansion. Insert sticks and freeze for at least 4-6 hours or until solid.
  3. If using, melt the dairy-free dark chocolate chips with coconut oil in a microwave or double boiler until smooth.
  4. Once the ice cream bars are frozen, carefully remove them from the molds. Dip each bar into the melted chocolate and place them on a parchment-lined baking sheet.
  5. Return the bars to the freezer for an additional 30 minutes to set the chocolate coating.
