Ingredients:

  • 200 ml rice milk
  • 4 tablespoons pitaya powder
  • 100 g bamboo fiber
  • 50 g maple syrup (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • 1 tablespoon agar-agar powder
  • Pinch of salt
  • Fresh pitaya slices for garnish (optional)

Instructions:

  1. In a small saucepan, combine the rice milk, pitaya powder, and agar-agar. Stir well and bring to a gentle boil over medium heat, whisking constantly.
  2. Once boiling, reduce heat and simmer for about 2 minutes until the agar-agar is fully dissolved.
  3. Remove from heat and let cool slightly. Add the bamboo fiber, maple syrup, vanilla extract, and salt. Whisk until smooth and well combined.
  4. Pour the mixture into a mixing bowl and use an electric whisk to whip until light and fluffy, about 3-5 minutes.
  5. Divide the mousse into serving dishes and refrigerate for at least 2 hours to set.
  6. Before serving, garnish with fresh pitaya slices if desired.
