Ingredients:

  • 4 pork chops
  • 1 cup Olive Garden Italian dressing
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, marinate the pork chops in Olive Garden Italian dressing for at least 30 minutes, preferably 2 hours.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
  3. Stir in the minced garlic, oregano, and basil, cooking for an additional minute until fragrant.
  4. Add the rice to the skillet, stirring to coat it in the vegetables and seasonings.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, or until the rice is cooked and liquid is absorbed.
  6. While the rice is cooking, preheat a grill or grill pan over medium-high heat. Remove the pork chops from the marinade, letting excess dressing drip off.
  7. Grill the pork chops for about 6-7 minutes per side, or until they reach an internal temperature of 145°F (63°C). Let them rest for a few minutes before serving.
  8. Fluff the rice with a fork and season with salt and pepper to taste. Serve the pork chops over the rice, garnished with fresh parsley.
