Ingredients:

  • 1 pound ground pork
  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame oil
  • 1 bunch bok choy, chopped
  • 2 cups jasmine rice
  • 4 cloves garlic, minced (for the rice)
  • 3 cups water (for the rice)
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix ground pork, soy sauce, ginger, minced garlic, and green onions. Season with salt and pepper.
  2. In a separate bowl, combine flour and water to form a dough. Knead until smooth, then cover and let it rest for 30 minutes.
  3. Roll the dough into thin sheets and cut out circles using a cookie cutter.
  4. Place a small spoonful of pork mixture onto each dough circle, fold, and seal the edges to form dumplings.
  5. In a pot, bring water to a boil and steam the dumplings for about 15 minutes or until cooked through.
  6. Meanwhile, rinse the rice under cold water until it runs clear. In a saucepan, heat sesame oil and sauté minced garlic until fragrant.
  7. Add the rinsed rice and water to the saucepan, bring to a boil, then reduce to low heat and cover for 15 minutes.
  8. In a separate pan, stir-fry the chopped bok choy in a bit of sesame oil until wilted, about 3-4 minutes.
  9. Serve the dumplings on a bed of garlic rice, topped with sautéed bok choy.
