Ingredients:

  • 1 cup jasmine rice
  • 2 cups vegetable broth or water
  • 300 g frozen prawns, thawed and peeled
  • 1 cup frozen peas
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring the vegetable broth or water to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  2. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the thawed prawns to the skillet and cook for about 3-4 minutes until they turn pink and opaque. Stir in the frozen peas and cook for an additional 2 minutes until heated through.
  4. In a small bowl, mix the butter, lemon juice, lemon zest, parsley, dill, salt, and pepper until well combined.
  5. Once the rice is cooked, fluff it with a fork and mix it into the skillet with the prawns and peas. Drizzle the lemon herb butter over the rice mixture and toss everything together until evenly coated.
  6. Serve hot, garnished with additional fresh herbs if desired.
