Ingredients:

  • 200g salmon fillet
  • 200g prawns, peeled and deveined
  • 1 cup cooked quinoa
  • 1 small cucumber, diced
  • 1 avocado, sliced
  • 1/2 red bell pepper, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat your grill or skillet over medium-high heat.
  2. Season the salmon fillet and prawns with salt, pepper, and half of the olive oil.
  3. Grill the salmon for about 4-5 minutes on each side until cooked through. Grill the prawns for 2-3 minutes on each side until they are pink and opaque.
  4. In a bowl, combine the cooked quinoa, cucumber, red bell pepper, and avocado.
  5. In a small bowl, whisk together the remaining olive oil, lemon juice, dill, salt, and pepper to create the dressing.
  6. Once the salmon and prawns are cooked, flake the salmon into bite-sized pieces.
  7. Assemble the bowl by placing the quinoa mixture at the base, topped with grilled salmon and prawns.
  8. Drizzle the dressing over the top and serve with lemon wedges.
