Ingredients:

  • 1 cup walnuts, soaked for 2 hours and drained
  • 1/2 cup sunflower seeds, soaked for 2 hours and drained
  • 1/4 cup nutritional yeast
  • 1 clove garlic
  • 1 tablespoon tamari or coconut aminos
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1 medium zucchini, spiralized into noodles
  • 1/2 cup cherry tomatoes, halved
  • Fresh basil leaves for garnish

Instructions:

  1. In a food processor, combine the soaked walnuts, sunflower seeds, nutritional yeast, garlic, tamari, oregano, smoked paprika, black pepper, and sea salt. Pulse until the mixture is well combined but still has some texture.
  2. Form the mixture into small balls, about 1 inch in diameter.
  3. In a bowl, toss the zucchini noodles with halved cherry tomatoes and a drizzle of olive oil if desired.
