Ingredients:

  • 1 cup cooked quinoa, cooled
  • 1/2 cup grated carrot
  • 1/2 cup grated zucchini
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sunflower seeds
  • 1 tablespoon tamari or coconut aminos
  • 1 tablespoon nutritional yeast
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • Large lettuce leaves for wrapping

Instructions:

  1. In a large bowl, combine the cooked quinoa, grated carrot, grated zucchini, red onion, parsley, and sunflower seeds.
  2. Add the tamari (or coconut aminos), nutritional yeast, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. In a separate bowl, mash the avocado and mix in the lemon juice until smooth. Season with salt to taste.
  4. To assemble, take a large lettuce leaf and spoon some of the quinoa mixture into the center. Top with a dollop of the avocado spread.
  5. Wrap the lettuce around the filling, securing it as needed, and enjoy your raw vegan burger!
