Ingredients:

  • 1 lb squid, cleaned and sliced into rings
  • 1 cup cooked black beans
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 tablespoon fresh cilantro, chopped
  • 1 lime, juiced
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 1 jalapeño, seeded and minced
  • 1 tablespoon fresh parsley, chopped

Instructions:

  1. In a bowl, combine the cooked black beans, diced red bell pepper, onion, and jalapeño. Drizzle with olive oil, lime juice, and season with salt and pepper. Mix well and set aside.
  2. Heat a grill pan over medium-high heat. Add the black bean mixture and grill for about 5-7 minutes until heated through and slightly charred. Remove from the grill and keep warm.
  3. In another bowl, season the squid rings with smoked paprika, garlic powder, cumin, salt, and pepper.
  4. Heat a non-stick skillet over medium heat and add a splash of olive oil. Add the seasoned squid rings and cook for about 2-3 minutes on each side until golden brown and crispy. Do not overcook to avoid rubbery texture.
  5. To serve, place a generous portion of grilled beans on a plate and top with the crispy refried squid. Garnish with chopped cilantro and parsley.
