Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup boiling water
  • 1/2 lb ground pork
  • 1 cup finely chopped Napa cabbage
  • 2 green onions, finely chopped
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/4 cup water
  • 1 tablespoon sesame seeds

Instructions:

  1. In a mixing bowl, combine flour and boiling water, stirring until a dough forms. Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes.
  2. In another bowl, mix ground pork, Napa cabbage, green onions, ginger, garlic, soy sauce, sesame oil, salt, pepper, and cornstarch until well combined.
  3. Roll the rested dough into a log and cut it into small pieces. Roll each piece into a circle about 3 inches in diameter.
  4. Place a small spoonful of the filling in the center of each dough circle. Fold and pleat the edges to seal the dumpling, ensuring there are no gaps.
  5. In a large skillet, add a little oil and heat over medium heat. Arrange the dumplings in the skillet and cook until the bottoms are golden brown, about 3-4 minutes.
  6. Add 1/4 cup of water to the skillet and cover immediately to steam the dumplings for about 5-7 minutes, or until fully cooked.
  7. For the dipping sauce, mix soy sauce, rice vinegar, ginger, sugar, and sesame seeds in a small bowl.
  8. Serve the dumplings hot with the ginger soy dipping sauce.
