Ingredients:

  • 14 oz firm tofu, pressed and cubed
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  4. Add the sliced red bell pepper, broccoli florets, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
  5. Return the cooked tofu to the skillet. Add soy sauce, sesame oil, and rice vinegar. Stir well to combine and heat through.
  6. Season with salt and pepper as needed.
  7. Garnish with sliced green onions and sesame seeds before serving.
