Shrimp Fried Rice with Pineapple and Peas

Ingredients:

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 pound shrimp, peeled and deveined
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup frozen peas
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 4 green onions, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of oil and sauté the garlic and green onions for 1-2 minutes until fragrant.
  4. Push the garlic and onions to the side and pour in the beaten eggs, scrambling them until just set.
  5. Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 2-3 minutes until heated through.
  6. Add the shrimp back to the skillet along with the pineapple chunks and peas. Stir in the soy sauce, oyster sauce, and sesame oil. Mix well and cook for another 2-3 minutes.
  7. Season with salt and pepper to taste, and serve hot.
