Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons unsalted butter, melted

Instructions:

  1. Preheat your smoker to 225°F (107°C).
  2. In a large bowl, combine the shrimp, olive oil, minced garlic, smoked paprika, lemon zest, salt, and pepper. Toss to coat the shrimp evenly.
  3. Cut 4 large pieces of aluminum foil. Divide the shrimp mixture among the foil pieces, placing them in the center.
  4. Top each shrimp portion with equal amounts of cherry tomatoes, bell pepper, and zucchini.
  5. Drizzle melted butter over the shrimp and vegetables, then sprinkle with fresh parsley.
  6. Fold the sides of the foil over the shrimp and vegetables to create a sealed packet.
  7. Place the foil packs on the smoker grate and cook for 20-25 minutes, or until the shrimp are pink and cooked through.
  8. Carefully remove the foil packs from the smoker, let cool for a minute, then open and serve hot.
