Ingredients:

  • 1 cup rice
  • 4 cups rice milk
  • 1/2 cup sugar or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut (toasted)
  • Fresh fruits (for garnish, optional)

Instructions:

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and rice milk. Bring to a gentle boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer, stirring frequently, for about 20-25 minutes or until the rice is tender and the mixture has thickened.
  4. Add the sugar (or maple syrup), vanilla extract, cinnamon, nutmeg, cardamom, and salt. Stir well to combine and cook for another 5-10 minutes until heated through.
  5. Remove from heat and let it cool slightly. The pudding will thicken as it cools.
  6. Serve warm or chilled, topped with toasted coconut and fresh fruits if desired.
