Ingredients:

  • 1 cup black beans (cooked)
  • 1 ripe mango (diced)
  • 1 small red onion (finely chopped)
  • 1 jalapeño pepper (seeded and diced)
  • 1/4 cup fresh cilantro (chopped)
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 6 small corn tortillas
  • 1 ripe avocado
  • 1 tablespoon nutritional yeast
  • 1 tablespoon olive oil
  • 1 tablespoon water

Instructions:

  1. In a medium bowl, combine cooked black beans, diced mango, red onion, jalapeño, cilantro, lime juice, cumin, smoked paprika, salt, and pepper. Mix well and set aside to let the flavors meld.
  2. In a blender, combine avocado, nutritional yeast, olive oil, and water. Blend until smooth and creamy. Adjust seasoning with salt and pepper as needed.
  3. Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side.
  4. To assemble the tacos, place a generous spoonful of the black bean and mango mixture onto each tortilla.
