Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. In a bowl, combine the shrimp, olive oil, smoked paprika, cumin, chili powder, salt, and pepper. Toss until shrimp are well coated.
  2. Preheat a grill or grill pan over medium-high heat. Cook the shrimp for 2-3 minutes on each side, or until they are opaque and cooked through.
  3. While the shrimp are cooking, prepare the mango salsa by mixing the diced mango, red onion, jalapeño, lime juice, and cilantro in a bowl. Season with salt to taste.
  4. Warm the corn tortillas on the grill for about 30 seconds on each side.
  5. Assemble the tacos by placing a few shrimp on each tortilla and topping them generously with mango salsa. Serve immediately.
