Spicy Tofu and Edamame Stir Fry

Ingredients:

  • 14 oz firm tofu, drained and cubed
  • 1 cup edamame beans, shelled
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili oil
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 8 oz rice noodles, cooked according to package instructions
  • Salt and pepper to taste
  • Green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions:

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a large pan or wok, heat the sesame oil over medium-high heat.
  3. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
  4. In the same pan, add the sliced onions, bell peppers, and edamame. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Add the minced garlic and ginger, and stir-fry for another minute until fragrant.
  6. Return the tofu to the pan and add the soy sauce and chili oil. Toss everything together until well combined and heated through.
  7. Add the cooked rice noodles and mix gently to combine. Season with salt and pepper to taste.
  8. Serve hot, garnished with sliced green onions and sesame seeds.
