Ingredients:

  • 2 cups finely chopped ripe pears
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup walnuts, chopped (optional)
  • 1/4 cup unsweetened shredded coconut (optional)
  • 3 large eggs
  • 1/2 cup unsweetened almond milk

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan with coconut oil.
  2. In a large mixing bowl, combine the chopped pears, applesauce, melted coconut oil, vanilla extract, and almond extract. Mix until well combined.
  3. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the walnuts and shredded coconut if using.
  6. In a separate bowl, beat the eggs and almond milk together, then add to the batter and mix until smooth.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
