Ingredients:

  • 1 cup glutinous rice flour
  • 1 cup water
  • 1 cup blueberries
  • 1 cup strawberries, chopped
  • 1 cup wild raspberries
  • 3 cups sugar
  • 1 cup corn, cooked and pureed
  • 1 cup cream cheese, softened
  • Colored frosting for decoration
  • Cherries or other fruit for topping

Instructions:

  1. In a mixing bowl, combine glutinous rice flour and water to form a smooth batter.
  2. Pour the batter into a steaming dish and steam for about 20-25 minutes until firm.
  3. In a separate bowl, mix the softened cream cheese with 1 cup of sugar until smooth and creamy.
  4. Once the rice cake has cooled, spread a layer of the cream cheese mixture on top.
  5. In a saucepan, combine the blueberries, strawberries, wild raspberries, and remaining sugar; cook over medium heat until the berries break down and form a sauce.
  6. Pour the berry sauce over the cream cheese layer, then drizzle with the corn puree for added texture.
  7. Decorate with colorful frosting and top with a cherry or another fruit of your choice.
  8. Chill in the refrigerator for at least 1 hour before serving.
