Ingredients:

  • 1 lb ground turkey
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 tbsp olive oil
  • 4 whole wheat pita breads
  • 1 cup cucumber, diced
  • 1/2 cup tahini
  • 2 tbsp lemon juice
  • 1/4 cup water (adjust for consistency)
  • 1/2 cup pickled red onions
  • 1/2 cup shredded lettuce

Instructions:

  1. In a large bowl, combine the ground turkey, grated onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, and cayenne pepper. Mix until well combined.
  2. Shape the mixture into oval-shaped kofta, about 2-3 inches long.
  3. Heat olive oil in a skillet over medium heat. Cook the kofta for about 5-7 minutes on each side, or until cooked through and browned.
  4. While the kofta is cooking, prepare the cucumber-tahini sauce. In a bowl, whisk together tahini, lemon juice, and water until smooth. Stir in diced cucumber and season with salt to taste.
  5. Warm the pita breads in a dry skillet or microwave until soft.
  6. To assemble, place 2-3 kofta in each pita, add pickled red onions, shredded lettuce, and drizzle with cucumber-tahini sauce.
  7. Serve immediately and enjoy!
