Ingredients:

  • 1 cup apple juice
  • 1/2 cup granulated sugar
  • 1/4 cup corn syrup
  • 2 tablespoons apple pectin
  • 1/2 teaspoon guar gum
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a medium saucepan, combine the apple juice, granulated sugar, and corn syrup. Stir over medium heat until the sugar dissolves.
  2. Bring the mixture to a boil, then reduce heat to medium-low. Add the apple pectin and stir well to combine.
  3. In a separate small bowl, mix the guar gum with a little bit of the syrup mixture to prevent clumping, then add it to the saucepan along with the cinnamon, lemon juice, vanilla extract, and salt.
  4. Continue to cook the mixture, stirring frequently, until it reaches 300°F (hard crack stage) on a candy thermometer.
  5. Once the desired temperature is reached, remove the saucepan from heat and carefully pour the mixture into a greased candy mold or onto a parchment-lined baking sheet.
  6. Allow the candy to cool completely at room temperature until hardened, then break or cut into pieces.
