Ingredients:

  • 1 cup oat milk
  • 1/2 cup caramel (vegan)
  • 1 tablespoon apple pectin
  • 1/2 teaspoon guar gum
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/4 cup apple sauce (unsweetened)
  • Optional: chopped nuts or apple slices for garnish

Instructions:

  1. In a medium saucepan, combine the oat milk, caramel, apple sauce, and sea salt over medium heat. Stir until the caramel is fully melted and the mixture is smooth.
  2. In a small bowl, whisk together the apple pectin and guar gum with a few tablespoons of the warm caramel mixture until well combined.
  3. Gradually add the pectin mixture back into the saucepan, whisking continuously to avoid lumps.
  4. Continue to cook on low heat for about 5-7 minutes, stirring constantly, until the mixture thickens.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the pudding into serving dishes and let it cool at room temperature for a few minutes before transferring to the refrigerator to chill for at least 2 hours.
