Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup coconut oil, melted
  • 1 cup almond milk (or other plant milk)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup vegan vanilla ice cream
  • 1/2 cup coconut cream, chilled
  • 2 tbsp powdered sugar
  • Natural food coloring (pink, blue, yellow)
  • Rainbow sprinkles (vegan)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted coconut oil, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the two prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Allow the cakes to cool completely in the pans before removing.
  7. Once cooled, layer the cakes with a spread of vegan vanilla ice cream in between, adding layers of natural food coloring to create a rainbow effect.
  8. For the topping, beat the chilled coconut cream with powdered sugar until fluffy.
  9. Spread the whipped coconut cream on top of the layered cake and decorate with rainbow sprinkles.
  10. Freeze the entire cake for at least 2 hours before slicing and serving.
