Ingredients:

  • 1 cup tahini
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/2 cup chopped walnuts
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the tahini, almond flour, maple syrup, and vanilla extract, stirring until well blended.
  3. Add the baking soda, salt, and cinnamon to the mixture, and mix until fully incorporated.
  4. Fold in the chopped walnuts until evenly distributed throughout the dough.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each cookie slightly with the back of a fork.

  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
