Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons milk (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease two small cake pans.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg, milk, vanilla extract, and almond extract to the butter mixture, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. In a small bowl, prepare the frosting by combining powdered sugar, milk, and vanilla extract until smooth.
  10. Once the cakes are completely cool, place one layer on a plate, spread a layer of frosting on top, then place the second layer on top.
  11. Frost the top and sides of the cake as desired.
