Ingredients:

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/4 cup chia seeds
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and honey (or maple syrup) until smooth.
  3. Add the vanilla extract and mix well.
  4. In a separate bowl, combine the whole wheat flour, rolled oats, chia seeds, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. If using, fold in the dark chocolate chips.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
