Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, spiralized into noodles
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 lemon, zested
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, combine olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. While the chicken is grilling, heat a large skillet over medium heat. Add a splash of olive oil and sauté the spiralized zucchini noodles for 2-3 minutes, just until tender. Season with salt and pepper.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing.
  7. Serve the grilled chicken over a bed of zucchini noodles, garnished with fresh parsley.
