Ingredients:

  • 1 cup pitted dates
  • 1 cup walnuts
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut oil
  • 1 tablespoon cocoa powder (optional)

Instructions:

  1. In a food processor, combine the pitted dates, walnuts, shredded coconut, vanilla extract, sea salt, and coconut oil.
  2. Pulse until the mixture is well combined and sticky. If using cocoa powder, add it in at this stage and pulse again until mixed.
  3. Scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
  4. Roll the balls in additional shredded coconut for a finishing touch, if desired.
  5. Place the bliss balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
