Ingredients:

  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons vegetable oil
  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon jerk seasoning
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the rice under cold water until the water runs clear, then set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and bell pepper, and sauté until softened.
  3. Stir in the garlic, diced tomatoes, thyme, curry powder, paprika, salt, and pepper. Cook for about 5 minutes until the mixture is fragrant.
  4. Add the rinsed rice to the pot and stir to coat the rice with the tomato mixture.
  5. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. While the rice is cooking, preheat the grill to medium-high heat.
  7. Rub the chicken thighs with jerk seasoning, then grill for about 6-8 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  8. Once the rice is done, fluff it with a fork and serve with the grilled chicken on top. Garnish with fresh cilantro.
