Ingredients:

  • 1 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small eggplant, cubed
  • 2 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 cup fresh basil, chopped
  • 1/4 cup feta cheese, crumbled (optional)

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the zucchini, bell peppers, eggplant, and peaches with olive oil, salt, and pepper.
  3. Grill the vegetables for about 4-5 minutes per side until tender and grill marks appear.
  4. Grill the peaches for about 2-3 minutes per side until slightly caramelized.
  5. In a small bowl, whisk together lemon juice, oregano, garlic powder, and additional salt and pepper to taste.
  6. Once grilled, remove the vegetables and peaches from the grill and let cool slightly.
  7. In a large serving bowl, combine the grilled vegetables and peaches. Drizzle with the lemon dressing and toss gently.
  8. Top with chopped basil and crumbled feta cheese if using. Serve warm or at room temperature.
