Ingredients:

  • 1 cup rice milk
  • 1 cup fresh pitaya (dragon fruit), pureed
  • 2 tablespoons pitaya powder
  • 1/4 cup bamboo fiber
  • 1/4 cup maple syrup or agave syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 teaspoon agar-agar powder (for setting)
  • Pinch of salt

Instructions:

  1. In a small saucepan, combine the rice milk, agar-agar powder, and a pinch of salt. Heat over medium heat until the agar-agar dissolves completely, stirring frequently.
  2. Remove from heat and let it cool slightly.
  3. In a mixing bowl, combine the pureed pitaya, pitaya powder, bamboo fiber, maple syrup, and vanilla extract. Mix until smooth.
  4. Once the rice milk mixture has cooled a bit, gently fold it into the pitaya mixture until well combined.
  5. Pour the mousse mixture into serving cups or bowls and refrigerate for at least 2 hours, or until set.
  6. Serve chilled, garnished with fresh fruit or a sprinkle of coconut flakes if desired.
