Ingredients:

  • 2 cups basmati rice
  • 1 lb chicken thighs, boneless and skinless
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1/4 cup raisins
  • 1/4 cup toasted almonds, chopped
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
  3. Add the chicken thighs to the pot, season with cumin, coriander, cinnamon, turmeric, cayenne, salt, and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Pour in the chicken broth and bring to a boil. Once boiling, add the soaked rice and raisins. Stir gently to combine.
  5. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let it sit covered for an additional 10 minutes. Fluff the rice with a fork and mix in the toasted almonds.
  7. Serve hot, garnished with fresh parsley.
