Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1 cup tapioca starch
  • 1 1/2 cups rice milk
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon or orange
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease two 26 cm round cake pans and line the bottoms with parchment paper.
  2. In a large mixing bowl, combine the gluten-free flour, tapioca starch, baking powder, baking soda, and salt. Whisk together until well blended.
