Ingredients:

  • 1 cup coconut sugar
  • 1/2 cup coconut cream
  • 1/4 cup apple pectin
  • 1/2 teaspoon guar gum
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/4 cup water

Instructions:

  1. In a medium saucepan over medium heat, combine the coconut sugar and coconut cream. Stir continuously until the sugar dissolves and the mixture begins to bubble.
  2. Reduce the heat to low and add the apple pectin, stirring well to incorporate.
  3. Sprinkle in the guar gum gradually while whisking to avoid clumps. Continue to cook for another 5 minutes, stirring constantly, until the sauce thickens.
  4. Add the sea salt and vanilla extract, mixing thoroughly. If the sauce is too thick, add a bit of water to reach your desired consistency.
  5. Remove from heat and let cool slightly before serving. The sauce will thicken further as it cools.
