Ingredients:

  • 1 block of firm tofu, pressed and cubed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • Wooden skewers, soaked in water

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, smoked paprika, salt, and pepper to create the marinade.
  2. Add the cubed tofu to the marinade, ensuring all pieces are well coated. Let it marinate for at least 30 minutes.
  3. While the tofu is marinating, prepare the vegetables by cutting them into bite-sized pieces.
  4. Preheat the grill to medium heat.
  5. Thread the marinated tofu and vegetables onto the soaked wooden skewers, alternating between tofu and vegetables.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
  7. Serve warm, garnished with extra lemon zest and fresh herbs if desired.
